1Choose red, but not ripe, tomatoes of similar size. Wash them well and dry them with a towel.
2Cut the tomatoes in half lengthwise.
3Place the tomato halves on a baking tray lined with baking paper, arranging larger pieces on the sides and smaller ones in the middle. Sprinkle some salt on top.
4Bake the tomatoes in a preheated oven at 200°F (95°C) for approximately 4 hours. Remove any completely dried pieces.
5Return the remaining tomatoes to the oven for another hour. Once all the tomatoes are dry, transfer them to a bowl.
6Sprinkle oregano and coat everything with olive oil.
