Kimchi Fried Rice

Directions

  1. 1Chop the bacon into small pieces.
  2. 2Add bacon to a pan with no oil and let it render all its fat.
  3. 3Chop the onions to a similar size as the bacon pieces.
  4. 4Add the onions to the pan with the bacon and season with a little bit of salt.
  5. 5Make a kimchi butter by mixing butter with Korean chilli paste.
  6. 6Add the roasted kimchi to the pan with the bacon and onions.
  7. 7Add the day-old rice to the pan and mix well.
  8. 8Crack an egg into a separate pan to fry it.
  9. 9Add a little bit more kimchi juice to the rice and mix well.
  10. 10Add some more butter to the rice.
  11. 11Add some Korean chilli powder to the rice and mix well.
  12. 12Add some scallions to the rice to brighten and lighten it up.
  13. 13Heat some sesame oil in a separate skillet.
  14. 14Transfer the rice from the pan to the hot skillet with sesame oil, ensuring to spread it evenly to create a bottom crust.
  15. 15Place the fried eggs on top of the fried rice.
  16. 16Add some kimchi butter on top of the eggs.
  17. 17Garnish with fresh scallions and nori.
  18. 18Sprinkle some Korean chilli powder on top for extra flavor and color.

Tips

  • Don't add kimchi too early, you want to get the flavors from the onions first.
  • Use day-old rice, preferably takeout rice, as it's drier and crumblier, which makes for the best fried rice.
