Directions

  1. 1Dice the pear into small pieces.
  2. 2Heat a drizzle of olive oil in a pan and add the diced pears.
  3. 3Season the pears with a pinch of salt and sauté until browned.
  4. 4Remove the sautéed pears from the pan and set aside in a small bowl.
  5. 5In a separate bowl, combine the grated Pecorino with freshly cracked black pepper and a splash of pasta water, mixing until it forms a creamy paste.
  6. 6Boil the paccheri pasta in salted water.
  7. 7Add black pepper to the same pan used for the pears and add a ladleful of pasta water.
  8. 8Transfer the cooked pasta directly into the pan and toss with more pasta water to emulsify.
  9. 9Add the sautéed pears back into the pasta and toss to combine.
  10. 10Turn off the heat and stir in the Pecorino cheese paste until the sauce is creamy and coats the pasta evenly.

  • 4 spoonfuls pecorino cheese
  • 80 g paccheri pasta
  • black pepper (optional)
  • olive oil
  • salt
  • pasta water
