High Protein & Low Calorie Pepperoni Pizza

Directions

  1. 1Add low-fat cottage cheese to a blender cup.
  2. 2Add nutritional yeast to the blender cup.
  3. 3Pour milk into the blender cup.
  4. 4Blend the mixture until smooth.
  5. 5Add coconut flour to the blended mixture.
  6. 6Add plain flour to the mixture.
  7. 7Add Italian herb seasoning to the mixture.
  8. 8Add garlic powder to the mixture.
  9. 9Add salt to the mixture.
  10. 10Crack two eggs into the mixture.
  11. 11Mix well to combine all ingredients.
  12. 12Spray baking paper with cooking oil on a baking tray.
  13. 13Spread the wet mixture thinly and big on the baking paper.
  14. 14Oven bake at 190°C (375°F) for 20-25 minutes until golden brown.
  15. 15Spread marinara/pizza sauce on the baked base.
  16. 16Sprinkle grated Parmesan cheese over the sauce.
  17. 17Add low-fat mozzarella cheese.
  18. 18Add low-fat cheddar cheese.
  19. 19Place thinly sliced pepperoni on top of the cheese.
  20. 20Sprinkle oregano over the toppings.
  21. 21Bake again for 6-12 minutes until the cheese is melted.
  22. 22Cut the pizza into slices.
  23. 23Serve and enjoy.

Tips

  • When spreading the pizza base mixture on baking paper, use a wet utensil/spatula to help spread it evenly and make it as big, thin & round as you can for the best thin & crispy crust results.
