Addictive Green Beans

Directions

  1. 1Bring a large pot of salted water to a boil.
  2. 2Add fresh green beans and cook for 5-7 minutes until they are bright green and crisp but soft to the bite.
  3. 3Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process; let them sit.
  4. 4Process peeled garlic cloves with a little avocado oil until it has a watery texture but still shows pieces of garlic.
  5. 5Heat a wide skillet or wok over high heat and add oil to coat the bottom of the pan.
  6. 6Once the oil is shimmering, add the green beans in a single layer and let them sit undisturbed for 1-2 minutes to get a char.
  7. 7Toss the green beans and repeat the blistering process once more.
  8. 8Add the prepared garlic directly to the pan with the green beans and cook and toss for 1-2 minutes until fragrant.
  9. 9Remove the green beans to a serving bowl.
  10. 10In the same dirty pan, add sesame oil, soy sauce, and coconut sugar (or regular sugar/maple syrup).
  11. 11Mix the sauce ingredients quickly until the sugar melts and the mixture becomes glossy.
  12. 12Pour the glaze over the green beans.
  13. 13Zest the peels of two lemons into the green beans.
  14. 14Juice two full lemons and add the juice to the green beans.
  15. 15Generously salt the green beans to taste and mix everything together.
  16. 16Serve immediately.

  • 0.25 cup soy sauce or tamari
  • 2 tbsp sugar or honey
  • 2 small lemons zested and juiced
  • Salt
