Prep 2 lbs of chicken by cutting it into small cubes.

Pat the chicken dry.

Season the chicken with 2 tsp of salt and 1 tsp of black pepper.

Coat the chicken with 5 tablespoons of cornstarch, ensuring it's fully coated.

Set the coated chicken aside.

In a cup, add brown sugar, 1 pickled jalapeño and its juice, and low sodium soy sauce.

Mix the sauce ingredients well to dissolve the brown sugar.

Add 1 tablespoon of cornstarch to the sauce mixture and mix until dissolved.

Set the wok to medium-high heat.

Cover the bottom of the wok with oil and allow it to heat up.

Drop pieces of chicken into the hot oil and fry for about 5 minutes, or until golden all around, doing this step in batches.

After 5 minutes, remove the chicken from the wok and drain as much oil as possible.

Repeat the frying process with the rest of the chicken.

Once all chicken is cooked, reduce the heat to medium-low and remove most of the oil.

Add jalapeños and onion to the wok and sauté for a couple of minutes.

After a couple of minutes, add minced garlic and sauté for about 30 seconds.

Grab the sauce mixture, mix it well, and pour it into the wok.

Bring the sauce to a simmer and allow it to thicken up for a couple of minutes, scraping the bottom of the pan.

Once the sauce has thickened, add the cooked chicken and mix it in.

Reduce the heat to the lowest setting.

Serve the jalapeño chicken.

2 lbs chicken breast or thighs cut in bite size pieces
2 tsp salt
1 tsp black pepper
6 tbsp corn starch; divided
6 tbsp dark brown sugar
6 tbsp low sodium soy sauce
1 pickled jalapeño with 6 tbsp juice pickled jalapeño finely chopped with pickled jalapeño juice
1 -3 jalapeño; cut into rounds
0.5 whole white onion; cut into strips
4 cloves minced garlic cloves

Tips
Make sure the chicken gets fully coated with cornstarch.
Fry chicken in batches until golden.
Scrape the bottom of your pan when simmering the sauce.
