Ground Beef and Sweet Potato Bowls

Directions

  1. 1Combine diced sweet potatoes, peppers and onions, broccoli florets, half cherry tomatoes, oil and all the seasonings listed for the vegetables.
  2. 2Place the vegetable mixture on a parchment-covered baking sheet and roast in the oven at 400F for 30 min until tender.
  3. 3Combine greek yogurt or mayo, dijon mustard, honey, minced garlic, dried dill, salt, pepper, and lemon juice in a small container and mix well to create the creamy garlic dill sauce.
  4. 4Heat a large pan and add oil for cooking the beef.
  5. 5Brown the ground beef, getting a nice crust on both sides before breaking it into small bits.
  6. 6Add in garlic and seasonings to the beef; mix well and cook for another 2-3 minutes until the beef is no longer pink.
  7. 7Build the bowls with the roasted vegetables and seasoned ground beef.
  8. 8Top the bowls with the creamy garlic dill sauce.

  • 1 medium red onion, medium-diced

  • 1 tbs minced garlic
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1 cup greek yogurt or mayo
