Creamy Lemon Garlic Salmon

Directions

  1. 1Heat oven to 425°F (220°C). Place a rack in the center.
  2. 2In a bowl, mix olive oil, lemon juice, Dijon, and minced garlic.
  3. 3Place salmon in a baking dish, spoon the mixture over the top, and season lightly with salt and pepper.
  4. 4Bake for 10–15 minutes, until the salmon flakes easily and stays moist.
  5. 5While the salmon bakes, melt butter in a small saucepan over medium-low heat.
  6. 6Add garlic and cook briefly until fragrant.
  7. 7Pour in the cream and let it gently simmer until slightly thickened.
  8. 8Remove from heat.
  9. 9Stir in lemon juice, parsley, and a pinch of black pepper.
  10. 10Taste and adjust gently.
  11. 11Spoon the warm lemon-garlic cream over the salmon.
  12. 12Let it rest a few minutes before serving with lemon slices.
