Directions

  1. 1Wash and clean the snappers with vinegar and lemon juice.
  2. 2Season the fish generously with a mixture of paprika, fish seasoning, all purpose seasoning, and black pepper, ensuring to rub it into the incisions and belly.
  3. 3Set the seasoned fish aside.
  4. 4Smash pimento seeds and set aside.
  5. 5Cut the scallions as desired.
  6. 6Mash some garlic.
  7. 7Slice the onion thinly.
  8. 8Cut green, red, and yellow bell peppers.
  9. 9Cut carrots into matchstick shapes.
  10. 10Add okra and pakchoi to the chopped vegetables.
  11. 11Heat some olive oil in a pot.
  12. 12Add bell peppers, onions, and garlic to the heated pot and sauté for 2-3 minutes until softened.
  13. 13Add pimento seeds, scotch bonnet pepper, okra, and pakchoi to the pot.
  14. 14Coat the vegetables well and allow them to steam down a little.
  15. 15Season the vegetables with leftover all purpose seasoning and taste to adjust seasoning.
  16. 16Allow the vegetable mixture to cool down for about five minutes.
  17. 17Lay down foil paper and parchment paper, then place a fish on top.
  18. 18Add the vegetable filling inside the fish and on top.
  19. 19Add a few slices of butter.
  20. 20Wrap up the fish tightly.
  21. 21Repeat the stuffing and wrapping process for the next fish.
  22. 22Preheat the oven to 450 degrees Fahrenheit.
  23. 23Place the wrapped fish in a baking pan.
  24. 24Bake the fish in the preheated oven for 30 to 35 minutes.
