Lemon Bar Recipe

Directions

  1. 1Preheat the oven to 350°F. Grease or line an 9 x 13 inch baking pan with parchment paper.
  2. 2In a mixing bowl, combine the flour, sugar, vanilla and melted butter. Mix until a ball forms and dough is completely mixed.
  3. 3Press the dough evenly into the bottom of the prepared baking pan.
  4. 4Bake the crust in the preheated oven for 20-30 minutes, or until edges are lightly golden brown. Remove from the oven and let it cool slightly.
  5. 5In a large mixing bowl, whisk together the granulated sugar and flour.
  6. 6Add the eggs and mix thoroughly.
  7. 7Stir in the lemon juice until the mixture is smooth and well combined.
  8. 8Pour the lemon filling over the baked shortbread crust, spreading it out evenly.
  9. 9Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggly in the center.
  10. 10Remove from the oven and let the lemon bars cool completely in the pan on a wire rack and then transfer to refrigerator.
  11. 11Once cooled, lift the bars out of the pan using the parchment paper overhang and transfer them to a cutting board.
  12. 12Dust with powdered sugar, and ENJOY!
