Olive Garden Copycat Zuppa Toscana

Directions

  1. 1Brown the Italian sausage in a large pot, breaking it into small pieces as it cooks.
  2. 2Once cooked, remove the sausage and set it aside.
  3. 3In the same pot, melt the butter and sauté the diced onion until it becomes soft and translucent.
  4. 4Add the minced garlic and cook until fragrant.
  5. 5Pour in the chicken broth, water, sliced yellow potatoes, salt, and black pepper.
  6. 6Bring the mixture to a boil, then simmer until the potatoes are tender and start to fall apart.
  7. 7Stir in the chopped kale and heavy cream.
  8. 8Return the cooked sausage to the pot.
  9. 9Taste and adjust seasoning if needed.
  10. 10Serve the Zuppa Toscana hot, topped with freshly grated Parmesan.
