Brown the Italian sausage in a large pot, breaking it into small pieces as it cooks.

Once cooked, remove the sausage and set it aside.

In the same pot, melt the butter and sauté the diced onion until it becomes soft and translucent.

Add the minced garlic and cook until fragrant.

Pour in the chicken broth, water, sliced yellow potatoes, salt, and black pepper.

Bring the mixture to a boil, then simmer until the potatoes are tender and start to fall apart.

Stir in the chopped kale and heavy cream.

Return the cooked sausage to the pot.

Taste and adjust seasoning if needed.

Serve the Zuppa Toscana hot, topped with freshly grated Parmesan.

1 Tbsp garlic, minced
6 cups chicken broth
2 cups water
4 yellow potatoes, cut into 1-inch pieces
3 tsp salt
1 tsp black pepper
2 cups heavy cream
4 cups chopped kale
Freshly grated Parmesan for topping
