Pour a little bit of oil from the sun-dried tomatoes jar into the bottom of the pot, which is on medium heat.

Add one yellow onion and four cloves of garlic.

Stir the onions and garlic until softened.

Add about a half can of tomato paste, which is about 3 tablespoons.

Add the entire 8-ounce jar of sun-dried tomatoes drained.

Stir to get everything combined for just 1 to 2 minutes.

Add in 2 32-ounce containers of chicken broth.

Add 1 cup of heavy whipping cream.

Add about 6 chopped basil leaves.

Add a little under a tablespoon of Italian seasoning.

Add about a teaspoon of garlic powder.

Add about 2 teaspoons of salt.

Optionally, add a couple of red pepper flakes.

Increase the heat to high and bring the soup to a boil, cooking for about 10 minutes.

Add a half of a box of pasta shells.

Cut the heat down to medium and let it cook until the pasta is soft, about 8 minutes.

Add in 8 ounces of cream cheese, cut into cubes.

Add about 3 handfuls of spinach, chopped or torn into pieces.

Add about 2.5 cups of chopped rotisserie chicken.

Add shredded Parmesan, about a fourth of the block.

Stir everything together until the cream cheese is totally melted and the spinach is wilted.

Serve a couple of scoops of soup, garnish with chopped basil, and a little bit of shredded Parmesan.

2 32 oz containers chicken broth
1 cup heavy whipping cream
6 leaves fresh basil, chopped
2 tsp salt
1 tbsp dried Italian seasoning
1 tsp garlic powder
0.25 tsp crushed red pepper
8 oz uncooked shell pasta
3 cups fresh baby spinach, roughly chopped
2.5 cups shredded rotisserie chicken
8 oz cream cheese, cubed
0.25 cup shredded Parmesan cheese
