Marry Me Chicken Soup

Directions

  1. 1Pour a little bit of oil from the sun-dried tomatoes jar into the bottom of the pot, which is on medium heat.
  2. 2Add one yellow onion and four cloves of garlic.
  3. 3Stir the onions and garlic until softened.
  4. 4Add about a half can of tomato paste, which is about 3 tablespoons.
  5. 5Add the entire 8-ounce jar of sun-dried tomatoes drained.
  6. 6Stir to get everything combined for just 1 to 2 minutes.
  7. 7Add in 2 32-ounce containers of chicken broth.
  8. 8Add 1 cup of heavy whipping cream.
  9. 9Add about 6 chopped basil leaves.
  10. 10Add a little under a tablespoon of Italian seasoning.
  11. 11Add about a teaspoon of garlic powder.
  12. 12Add about 2 teaspoons of salt.
  13. 13Optionally, add a couple of red pepper flakes.
  14. 14Increase the heat to high and bring the soup to a boil, cooking for about 10 minutes.
  15. 15Add a half of a box of pasta shells.
  16. 16Cut the heat down to medium and let it cook until the pasta is soft, about 8 minutes.
  17. 17Add in 8 ounces of cream cheese, cut into cubes.
  18. 18Add about 3 handfuls of spinach, chopped or torn into pieces.
  19. 19Add about 2.5 cups of chopped rotisserie chicken.
  20. 20Add shredded Parmesan, about a fourth of the block.
  21. 21Stir everything together until the cream cheese is totally melted and the spinach is wilted.
  22. 22Serve a couple of scoops of soup, garnish with chopped basil, and a little bit of shredded Parmesan.

  • 8 oz julienne-cut sun-dried tomatoes (drained, in oil with herbs)
  • 2 32 oz containers chicken broth
  • 1 cup heavy whipping cream
  • 6 leaves fresh basil, chopped
  • 2 tsp salt
  • 1 tbsp dried Italian seasoning
  • 1 tsp garlic powder
  • 0.25 tsp crushed red pepper
  • 8 oz uncooked shell pasta
  • 3 cups fresh baby spinach, roughly chopped
  • 2.5 cups shredded rotisserie chicken
  • 8 oz cream cheese, cubed
  • 0.25 cup shredded Parmesan cheese
