Peach Cobbler Inspired Chia Pudding

Directions

  1. 1Thinly slice 2 ripe large peaches.
  2. 2Add the sliced peaches, 2 tbsp maple syrup or brown sugar, 1 tsp vanilla bean paste, 1/2 tsp ground cardamom, juice and zest of half a lemon, and a pinch of salt to a sauté pan.
  3. 3Stir well to combine and cook for about 8-10 minutes, stirring occasionally, until the peaches have softened and the juices have slightly thickened.
  4. 4Scoop about a cup of the cooked peaches into a blender cup.
  5. 5Add 1/2 cup unsweetened plain plant-based yogurt, 3/4 cup unsweetened soy milk or pea milk, and 1/2 tsp kosher salt to the blender cup with the peaches.
  6. 6Blend until smooth.
  7. 7Pour the peach milk into a resealable container and add 1/3 cup chia seeds.
  8. 8Stir to combine the chia seeds and peach milk.
  9. 9Let the mixture sit for 10 minutes, then stir again to ensure no large clumps and even mixing of chia seeds.
  10. 10Cover and place in the fridge overnight to gel.
  11. 11To a mini food processor, add 3 tbsp gluten-free rolled oats and blend on high to make a chunky flour.
  12. 12Add 3 tbsp almond flour, 3 soft medjool dates, 1/2 tsp vanilla bean paste, and a generous pinch of salt to the food processor.
  13. 13Pulse together until a fine crumb forms.
  14. 14Layer some of the cooked peaches at the bottom of a serving glass or bowl.
  15. 15Spoon a portion of the chia pudding over the peaches.
  16. 16Pinch the crumble topping with your fingers to form bigger clumps, then sprinkle a generous portion on top of the chia pudding.
