Whisk the eggs in advance.

Cut the atsuage into bite-sized pieces.

Place the cut atsuage in a frying pan and coat with potato starch.

Add sliced onions and oil to the pan, then sauté until the onions become soft.

Add water, mentsuyu, and sugar. Mix, bring to a boil, then reduce heat to low.

Pour in the beaten eggs and lightly stir 3-4 times. Serve over rice.

Add green onions to taste.

1 block atsuage (fried tofu)
0.5 unit onion
3 unit egg
3 tablespoons potato starch
to taste green onion
some oil
150 ml water
2 tablespoons mentsuyu (4x concentrate)
1 tablespoon sugar

Tips
Mentsuyu can be substituted with 4 tablespoons of 2x concentrate, 3 tablespoons of 3x concentrate, or 6 tablespoons of straight mentsuyu.
