Slice the bread in half lengthwise and top with cheese slices, then toast until the cheese is melted and bubbly.
Season the steak with salt.
Heat a pan with oil and sear the steaks on both sides until cooked to your preference.
Remove the steak from the pan and slice it into strips.
Chop the onion into thin slices.
Chop the parsley.
Dice the red pepper.
Mince the garlic.
In a bowl, combine the chopped parsley, diced red pepper, minced garlic, dill, oregano, and olive oil to make the herb mixture.
In another bowl, combine mayonnaise and chopped chives for the sauce.
Assemble the sandwich: on the bottom half of the toasted bread, layer the steak, then add the caramelized onions (which are not shown being prepared but are present in the final assembly).
Add a generous amount of fries on top of the onions.
Spoon the herb mixture over the fries.
Add the chive mayonnaise on top of the herb mixture.
Cover with the top half of the toasted bread with melted cheese.
