Wash and soak any lentil or bean for 8 to 12 hours.

Drain and rinse the soaked lentils or beans.

Blend the lentils or beans with fresh water until completely smooth (ratio of 3 parts lentils to 5 parts water).

Pour the mixture into a non-stick pan and stir in salt.

Heat the mixture over low heat, stirring constantly, until it thickens into a smooth paste that clings to the spatula.

Pour the mixture into a mold or container.

Chill until set in the fridge for at least 1 hour.

Serve it cold, or pan-fry, bake, air-fry, or deep-fry until crispy on the outside.

Tips
Soaking beans/lentils prevents bloat and gas.
Straining the mixture before heating is optional; keeping the whole blended legume retains fiber, protein, and nutrients.
Cooking time varies (5-15 minutes) depending on heat and legume type.
