Irish Beef Stew

Directions

  1. 1Brown 2.5 pounds of stew meat in batches in a dutch oven.
  2. 2Remove the browned meat and set aside. Reduce the heat and add olive oil to the pot.
  3. 3Add 2 diced onions and 3 cloves of minced garlic to the pot, cook for about 3 minutes until soft.
  4. 4Add 1/2 package of chopped bacon and cook until browned.
  5. 5Add 3 carrots and 2 celery stalks. Stir and cook for a bit.
  6. 6Add 3 tablespoons of flour, stir and cook for a minute or so.
  7. 7Add 3 tablespoons of tomato paste and stir.
  8. 8Add 3 cups of chicken broth.
  9. 9Add 1 bottle of Guinness.
  10. 10Stir to combine and make sure everything is covered. Add 2 bay leaves and 2 teaspoons of thyme.
  11. 11Add the browned meat back into the pot with all its juices.
  12. 12Bring to a simmer, put the lid on and cook for 2 hours. Remove the lid and cook for an additional 30-40 minutes.
