Directions

Brown 2.5 pounds of stew meat in batches in a dutch oven.

Remove the browned meat and set aside. Reduce the heat and add olive oil to the pot.

Add 2 diced onions and 3 cloves of minced garlic to the pot, cook for about 3 minutes until soft.

Add 1/2 package of chopped bacon and cook until browned.

Add 3 carrots and 2 celery stalks. Stir and cook for a bit.

Add 3 tablespoons of flour, stir and cook for a minute or so.

Add 3 tablespoons of tomato paste and stir.

Add 3 cups of chicken broth.

Add 1 bottle of Guinness.

Stir to combine and make sure everything is covered. Add 2 bay leaves and 2 teaspoons of thyme.

Add the browned meat back into the pot with all its juices.

Bring to a simmer, put the lid on and cook for 2 hours. Remove the lid and cook for an additional 30-40 minutes.

1 bottle Guinness
2 pieces bay leaves
2 teaspoons thyme
