1Peel and cut 1.5kg of maris pipers into even chunks.
2Add potatoes to a large pan of cold water. Add salt and bicarbonate of soda, then bring to the boil.
3Boil until a knife slips through easily (around 10-15 minutes).
4Drain and allow potatoes to steam dry.
5Pour a generous amount of oil into a large tray, place it into the oven to get hot for a few minutes. Remove the tray, add the potatoes, and salt, turning to coat in oil.
6Roast for 50-60 minutes, turning a few times, until golden and crisp.
7Meanwhile, prepare the sauce: in a bowl, mix crushed garlic, heated chilli crisp, honey, soy sauce, rice wine vinegar, spring onions, and coriander. Adjust sweet/sour balance to your liking.
8Pour the sauce over the roasted potatoes and stir well.
9Serve and enjoy!
