Add about 6 cups of chopped frozen or fresh broccoli, 2 cups of shredded carrots, 1 cup of diced or chopped white onion into the crock pot.

Add garlic powder and pepper into the pot.

Add 3 cups of chicken broth into the pot.

Mix another cup of chicken broth with a quarter cup of cornstarch in a separate container.

Pour the chicken broth and cornstarch mixture into the crock pot.

Mix all ingredients in the crock pot.

Set the crock pot on high for 4 hours or low for 6 hours.

Once it's done, give it a good mix.

Add 1 cup of heavy cream into the pot.

Add 16 ounces of Velveeta cheese into the pot.

Put the lid back on and let it cook for another 20 minutes.
