1Slice your onion, mince the garlic, and measure out all seasonings. Bring cream or coconut milk to room temperature.
2Heat butter and olive oil in a large skillet over medium heat.
3Add in the onions and let them caramelize for 15-20 minutes, stirring occasionally, until golden and jammy. Add a splash of water if they start sticking.
4While onions are caramelizing, boil a pot of salted water and cook pasta until al dente. Drain, reserving some pasta water.
5When the onions are deeply golden, stir in minced garlic and all the seasonings. Let it bloom for a minute.
6Add the chili crisp and sauté for a minute.
7Pour in the cream (or coconut milk). Let it simmer for a few minutes.
8Add the grated Parmesan cheese and stir.
9Add your cooked pasta to the sauce and toss to coat. Use reserved pasta water to loosen if too thick.
10Serve hot with an extra spoon of chili crisp and fresh parsley.
