Vanilla Burnt Basque Cheesecake

Directions

  1. 1Crack 4 eggs into a bowl.
  2. 2Whisk the eggs until well combined.
  3. 3Add 900 grams of cream cheese to a bowl.
  4. 4Add 250 grams of caster sugar to the cream cheese.
  5. 5Whisk the cream cheese and sugar until smooth.
  6. 6Scrape the vanilla beans from two vanilla bean pods into the cream cheese mixture.
  7. 7Pour 500ml of heavy cream into the mixture.
  8. 8Whisk everything together until fully incorporated and smooth.
  9. 9Pour the whisked eggs into the cream cheese mixture.
  10. 10Whisk until all ingredients are well combined and the mixture is uniform.
  11. 11Add 15 grams of plain flour to the mixture.
  12. 12Fold in the flour until it is fully incorporated into the batter.
  13. 13Use an immersion blender to ensure the batter is completely smooth.
  14. 14Strain the batter through a sieve into another bowl to remove any lumps.
  15. 15Grease a round baking pan with butter.
  16. 16Line the pan with parchment paper, allowing it to extend above the edges.
  17. 17Pour the cheesecake batter into the prepared pan.
  18. 18Place the pan in a preheated oven at 250 degrees Celsius for baking.
  19. 19Remove the cheesecake from the oven once it has a dark, burnt top.
  20. 20Carefully remove the cheesecake from the springform pan.
  21. 21Peel away the parchment paper from the cheesecake.
  22. 22Cut the cheesecake into slices for serving.
  23. 23Serve a slice of the cheesecake on a plate.
