Directions

  1. 1Clean the pinto beans, picking out any that don't look right.
  2. 2Place the cleaned beans in a pot with an onion, a jalapeno, some garlic, a smoked ham hock, and some chicken bouillon.
  3. 3Bring the mixture to a boil, then cover, turn down to low, and check after an hour and a half.
  4. 4Slice up a whole pack of bacon and cook it covered until it's crispy.
  5. 5Once the bacon is cooked, remove it from the pan.
  6. 6Drain off most of the bacon fat from the pan.
  7. 7Add the vegetables (onion and jalapeno from the bacon pan) to the pan and cook covered for 10 minutes.
  8. 8After 10 minutes, add some garlic to the vegetables.
  9. 9After a couple of minutes, add tomatoes to the pan.
  10. 10Cook covered for about 10 minutes.
  11. 11After 10 minutes, remove the cover and cook down the mixture until it becomes a jam-like consistency.
  12. 12Once the beans are done, remove the big pieces and the ham hock.
  13. 13Pull the meat off the ham hock and cut it into chunks; also pull the skin off and cut it into small pieces.
  14. 14Return the ham hock meat and skin, and the bacon to the pot with the beans.
  15. 15Add the tomato-onion mixture to the pot and mix well.
  16. 16Add some juice from canned diced jalapenos, then about half the can of diced jalapenos (or however much you like).
  17. 17Add a big handful of cilantro to the pot.
  18. 18Cook covered for another half an hour.
  19. 19Plate up the Frijoles Charros and finish with a couple of cilantro leaves.
