Directions

  1. 1Clean the pinto beans by removing any undesirable ones.
  2. 2Add 1 lb of clean and rinsed pinto beans, 8 cups of water, 1.5 tablespoons of salt, and 4 garlic cloves to a pan.
  3. 3Bring the beans to a rapid boil.
  4. 4Reduce the heat to medium and cover the pan with tin foil.
  5. 5Cook the beans for about two hours.
  6. 6Chop up half a pound of bacon.
  7. 7Chop up some weenies (or sausage if preferred).
  8. 8Cut the ham into small squares.
  9. 9Dice half a white onion, deseed and devein one jalape o, and chop two Roma tomatoes.
  10. 10Start frying the chopped bacon while the beans are cooking.
  11. 11Once the bacon is halfway cooked, move it to the side and cook the chopped weenies.
  12. 12Move the cooked weenies to the side and add the chopped ham.
  13. 13Mix everything together.
  14. 14Before adding chorizo, remove excess grease from the pan.
  15. 15Add two chorizos (after removing the skin) to the pan and cook for five to seven minutes.
  16. 16Add the jalape os and white onion, and cook them together for at least four minutes.
  17. 17After one hour of cooking, add two more cups of water to the beans.
  18. 18Add the chopped tomatoes to the pan with the cooked meats and vegetables.
  19. 19Mix and cook for a couple of minutes, then set aside until the beans are done.
  20. 20Once the beans are done (after two hours), add the cooked meat and vegetable mixture to the beans.
  21. 21Serve and garnish with a little queso fresco and cilantro.
