Directions

1Carefully cut the corn into ribs shape.
2Mix salt, white pepper, chipotle chilli flakes, ground cumin and smoked paprika.
3Mix sour cream with lime zest, lime juice, chopped coriander and a pinch of salt to make a dip.
4Heat oil to 175°C and fry corn ribs for 4 minutes.
5Toss the fried corn ribs with the spice mix.
6Serve with the dip.
