Directions

  1. 1Rub basil pesto all over chicken.
  2. 2Wrap chicken in prosciutto.
  3. 3Lightly bread the chicken.
  4. 4Pan fry the chicken.
  5. 5Cook cherry tomatoes with shallots, garlic, thyme, zest of 1 lemon chili flakes, kosher salt and black pepper.
  6. 6Serve tomatoes with chicken and burrata cheese and fresh basil.

  • 4 chicken cutlets
  • 0.33 cup basil pesto
  • 8 slices prosciutto
  • 1.5 cups panko bread crumbs
  • 0.66 cup grated parmesan
  • 2 balls burrata cheese
  • 3 cups cherry tomatoes
  • 0.25 cup extra virgin olive oil
  • 2 shallots
  • 6 cloves garlic
  • 2 teaspoons honey
  • 2 tablespoons fresh thyme leaves
  • 1 lemon
  • chili flakes
  • kosher salt
  • black pepper
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons honey
