Garlic Chili Oil

tiktok.com
Serves 1

Directions

  1. 1Start with a whole head of garlic and roughly chop it.
  2. 2Take a large shallot and thinly slice it on a finger death trap (mandolin).
  3. 3In a separate bowl combine gochugaru, chili flakes, shiitake mushroom powder, optional MSG, sugar, and some grated ginger.
  4. 4In a small pot, add in your neutral oil, garlic, and shallots, and slowly bring your heat up to 350 degrees Fahrenheit. Do not heat and then add.
  5. 5Once the garlic and shallot are nicely golden, carefully strain them.
  6. 6Bring that oil back up to temperature and then carefully pour it over your spices.
  7. 7Add a little soy sauce, a little rice vinegar, and don't forget the sesame seeds.
  8. 8Once it's cooled, add in your fried garlic and shallots.
  9. 9Transfer the chili oil into a jar.

Ingredients

  • 2 cups Neutral Oil
  • 10 cloves Garlic
  • 1 large Shallot
  • 2 thirds cup Gochugru

  • 2 inch knob Ginger
  • 2 tsp Shitake Mushroom Powder
