1Cut chicken thighs into large bite-sized pieces. Place cilantro, garlic, lime zest, mayonnaise, chili powder, pepper, salt, cumin, cayenne, and honey into a blender or food processor; blend until a paste forms. Reserve two tablespoons for the butter. Mix remaining marinade with chicken and lime juice; toss to coat. Marinate for at least one minute, or overnight.
2Preheat air fryer to 375°F (190°C). Skewer chicken and cook for 17-20 minutes, until fully cooked through. For crispier edges, increase temperature to 400°F (205°C) for the last 2-3 minutes.
3While chicken cooks, mix melted butter with reserved marinade.
4Let chicken rest for 5-10 minutes, then baste with cilantro butter, more fresh cilantro, lime juice, and a hot honey drizzle.
