Start by adding water and flour to the mixer.

Slowly add the dissolved yeast to the dough.

Drizzle oil into the dough.

Fold in wild garlic, chives, and bay leaf into the dough.

Once mixed, scrape the dough onto an oiled surface.

Divide the dough into four portions.

Give each portion a few gentle folds.

Leave the dough to proof for a few hours.

For the next fold, give each piece a few turns.

Coat the dough pieces in polenta.

After the second proof, the dough is ready for the oven.

Cover the dough with oil.

Dimple the dough.

Sprinkle with Maldon salt.

Bake for around 30 minutes until golden and crisp.
