Creamy Italian Soup

Directions

  1. 1Remove the casing from one package of mild Italian sausage links and add them to a pot, breaking them up as they cook.
  2. 2While the sausage is cooking, add a fourth of a yellow onion to a food processor and chop it up.
  3. 3Add the chopped onion to the Italian sausage and continue to cook until the meat is fully browned.
  4. 4Season the mixture with Italian seasoning, crushed red pepper flakes (optional), and black pepper. Mix well and cook everything together.
  5. 5Add one tablespoon of minced garlic.
  6. 6Drain some of the grease from the sausage using a paper towel.
  7. 7Add one can of petite diced tomatoes (processed in a food processor if preferred for texture) to the meat mixture and cook for about one minute.
  8. 8Add one box (four cups or 32 ounces) of chicken broth.
  9. 9Once the mixture is about to boil, add one cup of ditalini pasta.
  10. 10Stir the pasta every one to two minutes to prevent it from sticking to the bottom of the pan.
  11. 11After about 10 minutes, when the pasta is fully tender, add a fourth of a block of cream cheese.
  12. 12Once the cream cheese is melted, add a fourth of a cup of heavy whipping cream and a fourth of a cup of shredded Parmesan cheese.
  13. 13Give it a good stir.
  14. 14Serve with Texas toast and top with more shredded Parmesan cheese.

Tips

  • For a smoother texture, process the petite diced tomatoes in a food processor if you don't like the texture of tomatoes.
  • Stir the ditalini pasta every one to two minutes to prevent it from sticking to the bottom of the pan.
  • If you don't like spice, you can omit the crushed red pepper flakes.
