1In a large bowl, add 1 pound of ground chicken, 3/4 cup of gluten-free panko, a small shake of cayenne, 1/2 teaspoon of smoked paprika, 1/2 teaspoon of onion powder, 1/2 teaspoon of garlic powder, 2-3 cloves of minced garlic, 1 teaspoon of honey, and 1 egg.
2Mix until everything is well combined.
3Form into balls and place on a baking sheet.
4Bake for 18-20 minutes at 400 degrees.
5In a pan, combine 1/2 cup of honey, 2 tablespoons of Cholula, 1/4 teaspoon of cayenne, 1 teaspoon of chipotle powder, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of onion powder.
6Bring to a steady simmer on medium heat.
7Once you reach a smooth consistency, remove from heat and cover.
8Once the meatballs are done and cooled, add them to the hot honey mixture.
9Toss to coat.
10Let them simmer for a second so all of the juices soak right in.
