1Add mutton to a pan and pour the yogurt mixed with whole dried red chilies over the meat. Stir well and start cooking on medium-high heat until the water evaporates and the meat starts to brown.
2Add cooking oil and stir to fry.
3Add the finely sliced onion and ginger garlic paste, and continue to stir-fry.
4Add salt, green cardamoms, black cardamom, and cinnamon. Continue frying until the onions and garlic are well incorporated.
5Make slits in the green chilies and add them to the pan.
6Add 2 cups of water, cover the pan, and cook on low heat until the meat is tender.
7Once the meat is tender and the water has reduced, sprinkle with cumin powder, black pepper, and dried coriander. Continue cooking until the liquid is almost completely dried and the mutton is well-roasted.
Ingredients
1 kg mutton
1 cup yogurt
1 small bowl whole dried red chili
1/4 cup cooking oil
1 whole onion
1 tbsp ginger garlic paste
1 - 1.5 tsp salt
2 whole green cardamom
1 whole black cardamom
1 piece cinnamon
3-4 whole green chili
1/2 tsp cumin powder
1 pinch black pepper (optional)
1 tsp dried coriander
Equipment
panspatula
Tips
Use sour yogurt if possible.
Soak the whole dried red chilies in the yogurt for 30 to 60 minutes beforehand to release flavor.
If you are short on time, use a pressure cooker for 18-20 minutes instead of slow-cooking in a pan.
The meat is done when it is butter-soft and has a slight shine.
