1Combine soy sauce, mirin, garlic, sake and brown sugar, and mix thoroughly.
2Pour your mixture in a pot and bring to a light boil and remove after two minutes of simmering.
3Lube up your pan and lightly brown your thinly sliced pork on both sides before removing.
4In the same pan, add your sauce and once the sauce starts to turn glossy, re-add your pork and cook until the sauce is starting to caramelize and stick to the pork.
5Take a fresh bowl of rice and place your pork down.
6Optionally garnish with scallions and an egg yolk and blow torch your pork to caramelize it some more.
