1In a bowl add gram flour, salt, turmeric, red chili powder, water and mix well. Your gram flour batter is ready, set aside.
2In a pan heat oil and add mustard seeds. Cook for 1-2 minutes.
3Now add curry leaves and mix well. Add green chilies, turmeric powder, red chili powder, cumin powder, red chili flakes, salt, boiled potatoes and cook for 2-3 minutes. Set aside and let it cool at room temperature.
4Now take the potato mixture and make small potato balls. Dip them in gram flour batter and fry on medium flame until light golden in color. Your Vada is ready, set aside.
5Heat a pan and add whole red chilies. Roast for 1 minute.
6Now add coconut, garlic, peanuts and cook for 1 minute.
7Transfer the prepared mixture into grinder and add salt, red chili powder, garlic cloves and grind well. Your dry Vada Pav chutney is ready.
8In a blender add coriander, mint, onion, tomatoes, garlic, green chilies, lemon juice, salt, water and blend well. Your green chutney is ready.
9Take the pav bread, spread the green chutney and dry Vada Pav chutney in it, place the Vada in it, add some dry Vada Pav chutney and cover with top bun.
10Press the bun gently and your Vada Pav is ready.
