Finely mince garlic.

Slice up a jalapeño or two.

Trim off the little horn at the top of the shrimp using kitchen shears.

Trim off the top of the head and some of the legs of the shrimp.

Remove the digestive tract by inserting a toothpick through the shell and gently pulling through.

Rinse the cleaned shrimp.

To the cleaned shrimp, add cornstarch, Shaoxing wine, water, a neutral cooking oil (like avocado oil), garlic powder, and a little salt.

Give the shrimp a good mix.

For the salt and pepper seasoning, combine one part salt, two parts sugar, and a half part black pepper in a small bowl.

Give the salt and pepper seasoning a good mix.

Heat peanut oil to 350°F in a pan.

Fry the shrimp in small batches for about three to four minutes until cooked through.

Strain the fried shrimp.

Add a little oil to your wok.

Add minced garlic and sliced jalapeños to the wok and sauté quickly.

Add all the fried shrimp to the wok.

Add the salt and pepper seasoning to the shrimp and toss it all together.

Serve the salt and pepper shrimp immediately.

2 lbs whole shrimp, shell on and deveined
1 cup cornstarch
3 tbsp Shaoxing cooking wine
2 tbsp water
1 tbsp neutral cooking oil
0.5 tsp garlic powder
0.25 tsp salt
4 cloves garlic cloves
2 jalapeños
peanut oil
1 tbsp sugar
0.5 tbsp kosher salt
1 tsp black pepper

Tips
If you're not eating the shrimp with the shell, you're missing out.
Using shrimp with the head on adds extra flavor.
Fry shrimp in small batches to avoid overcrowding the pan.
Adjust seasoning to taste.
