2Combine the Cajun seasoning ingredients (paprika, cooking salt, onion powder, garlic powder, dried thyme, black pepper, cayenne pepper, brown sugar, and olive oil) in a bowl and mix well.
3Add the salmon cubes to the bowl with the spice mix and coat them evenly.
4Scrunch a sheet of foil lightly, unfold without flattening the crinkles, then place it on a baking tray, securing it by folding over the tray edges. Do a second piece to cover the whole tray.
5Spread the seasoned salmon pieces evenly on the crinkly foil on the baking tray.
6Bake the salmon at 240°C/460°F (220°C fan-forced) for 12 minutes until the surface is golden and the inside is perfectly cooked and succulent.
7Serve the baked salmon bites, garnished with green onions and topped with sauce.

4 salmon fillets, skinless, cut into 2.5cm / 1″ cubes
1.5 tsp paprika (regular/sweet, smoked also lovely)
0.75 tsp cooking salt / kosher salt (halve for table salt, +50% for flakes)
0.5 tsp onion powder
0.5 tsp garlic powder (don’t sub with fresh garlic, will burn)
0.25 tsp dried thyme
0.25 tsp black pepper
0.25 tsp cayenne pepper, optional for slight spiciness
2.5 tsp brown sugar, tightly pack the spoon measure else you’ll be short
