Directions

- 2Lay the cucumber strips flat on a cutting board, overlapping slightly to create a large rectangular base.
- 3Spread a layer of light cream cheese evenly over the cucumber strips.
- 4Place shredded chicken along one edge of the cream cheese-covered cucumber.
- 5Season the chicken with black pepper.
- 6Drizzle hot honey over the chicken.
- 7Add shredded carrots on top of the chicken.
- 8Sprinkle chopped scallions over the carrots.
- 9Carefully roll the cucumber tightly, starting from the edge with the filling.
- 10Cut the rolled cucumber into individual bite-sized pieces.
- 11Serve the cucumber rolls with extra hot honey and light cream cheese for dipping.
