Caramelized Onion Galette

Directions

  1. 1Combine flour, sugar, and salt in a bowl.
  2. 2Add the diced butter to the flour and mash with fingers until pea-sized pieces form.
  3. 3Add cold water and mix until dough comes together into a rough, lumpy ball.
  4. 4Roll into a ball, flatten into a disc, wrap in plastic, and chill for 30-45 minutes.
  5. 5Preheat oven to 375°F and line a baking sheet with parchment paper.
  6. 6Heat olive oil in a pan over medium-high heat and add onions.
  7. 7Cook onions until soft and brown, season with salt and pepper, and cool slightly.
  8. 8Roll out the chilled dough to 12 inches wide on a floured surface and place on the baking sheet.
  9. 9Place softened Boursin cheese in the center and spread to within 1 inch of the edge.
  10. 10Spread halved cherry tomatoes over the cheese, followed by the caramelized onions.
  11. 11Fold the dough edges over the filling, crimping every few inches.
  12. 12Brush the crust with melted butter and sprinkle with herbs.
  13. 13Bake for 45-60 minutes until crust is golden and onions are browned.

  • 5 oz boursin herbed cheese, softened
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp melted butter
  • 1/2 tsp dried italian seasoning
  • fresh herbs (optional)
