NO KNEAD, NO MIXER SALT BREAD

Directions

  1. 1Add all dry ingredients: bread flour, cake flour, milk powder, sugar, salt, and yeast into a bowl on a kitchen scale.
  2. 2Add cold tap water to the dry ingredients, mixing it by hand until just combined.
  3. 3Cover the dough and let it rest for 25 minutes.
  4. 4Add softened butter into the dough and knead for 2-3 minutes until well combined.
  5. 5Cover the dough and let it rest for another 25 minutes before starting the first set of stretch and folds.
  6. 6Perform the first set of stretch and folds.
  7. 7Repeat the stretch and folds two more times, with 25-minute rests in between each set.
  8. 8Let the dough rise until it is about 1.5 times its size.
  9. 9Punch down the dough to release air.
  10. 10Divide the dough into individual pieces and shape them into a tadpole shape.
  11. 11Roll out each piece of dough into an elongated shape.
  12. 12Roll each elongated piece of dough from the wide end to the narrow end to form the salt bread shape.
  13. 13Place the shaped dough on a baking sheet, spray with oil, and sprinkle with salt.
  14. 14Bake the salt bread in the oven.
  15. 15Brush the baked salt bread with butter.
