Add all dry ingredients: bread flour, cake flour, milk powder, sugar, salt, and yeast into a bowl on a kitchen scale.

Add cold tap water to the dry ingredients, mixing it by hand until just combined.

Cover the dough and let it rest for 25 minutes.

Add softened butter into the dough and knead for 2-3 minutes until well combined.

Cover the dough and let it rest for another 25 minutes before starting the first set of stretch and folds.

Perform the first set of stretch and folds.

Repeat the stretch and folds two more times, with 25-minute rests in between each set.

Let the dough rise until it is about 1.5 times its size.

Punch down the dough to release air.

Divide the dough into individual pieces and shape them into a tadpole shape.

Roll out each piece of dough into an elongated shape.

Roll each elongated piece of dough from the wide end to the narrow end to form the salt bread shape.

Place the shaped dough on a baking sheet, spray with oil, and sprinkle with salt.

Bake the salt bread in the oven.
