Brown Butter Chocolate Chip Banana Bread

Directions

  1. 1Add butter to a saucepan over medium heat and stir often until it melts, foams, sizzles, then turns golden with a nutty smell.
  2. 2Once browned, pour into a bowl and place in the freezer for 5 minutes; you want it warm, not hot.
  3. 3In a large bowl, mash bananas until mostly smooth.
  4. 4Add 1/2 cup of the browned butter, brown sugar, white sugar, egg, and vanilla.
  5. 5Whisk for 1 to 2 minutes until glossy.
  6. 6Add flour, baking soda, baking powder, salt, and cinnamon, mixing very thoroughly so everything is evenly distributed.
  7. 7Preheat oven to 350°F / 175°C.
  8. 8Once no dry flour remains, fold in about 1 cup of chocolate chips, saving the rest for topping.
  9. 9Line or grease a loaf pan and pour in the batter.
  10. 10Sprinkle remaining chocolate chips on top.
  11. 11Bake for 60 minutes, loosely covering with foil halfway through to prevent over-browning.
  12. 12Insert a toothpick into the center; it should come out with a few moist crumbs, not wet batter.
