  1. 1Separate six egg whites from the yolks and put them in a large bowl.
  2. 2Add half a cup of monkfruit and one teaspoon of lemon to the egg whites.
  3. 3Whip the mixture until stiff peaks form.
  4. 4Draw an 8-inch circle on three pieces of parchment paper.
  5. 5Divide the whipped egg white mixture equally among the three parchment circles, creating nice round shapes.
  6. 6In a separate bowl, mix one scoop of protein powder with three tablespoons of almond milk.
  7. 7Drizzle the protein mixture over the egg white circles on the parchment paper, creating a marbled effect.
  8. 8Bake the circles in the oven at 215°F for one and a half hours and let them cool for 30 minutes.
  9. 9Layer the cooled cake circles with oikos and the remaining protein mixture to assemble the Napoleon cake.
  10. 10Gently press the layers together to form the cake.
