Serves 1

Directions

  1. 1Add tomato paste and water to a small saucepan over medium heat.
  2. 2Whisk until smooth.
  3. 3Add vinegar, sugar, corn syrup, and salt.
  4. 4Whisk to combine.
  5. 5Mix all spices (onion powder, ground cloves, ground allspice, ground cinnamon, celery seed) in a small bowl.
  6. 6Whisk the spice mixture into the pan.
  7. 7Bring to a low simmer, where bubbles break the surface, not a rolling boil.
  8. 8Reduce heat to low-medium.
  9. 9Simmer uncovered for 15 to 18 minutes, stirring every 3 to 4 minutes, until the volume reduces by about 20%.
  10. 10Remove from heat.
  11. 11Let cool for 5 minutes.
  12. 12Immersion blend for 30 to 45 seconds to achieve a nice smooth, glossy texture.
  13. 13Cool to room temperature before jarring, as it thickens as it cools.

Ingredients

  • 170 g Tomato paste
  • 120 g Water
  • 75 g Distilled white vinegar
  • 75 g Granulated white sugar
  • 15 g Light corn syrup
  • 7 g Fine salt
  • 3 g Onion powder
  • 0.5 g Ground cloves
  • 0.5 g Ground allspice

Tips

  • Ground clove is the secret spice that makes this taste like Heinz ketchup; do not add more than 0.5g.
  • Immersion blending is not optional and gives the ketchup its gloss.
  • The ketchup will thicken as it cools.
