Welcome to Day 13 of my Cozy Winter Meals Series. Today we're making this incredibly delicious Marry Me Chicken Gnocchi Soup.

Add oil to a large pot.

Sear two seasoned chicken breasts on both sides.

Remove the chicken breasts from the pan.

Add a little bit of the oil from the sun-dried tomato jar to the pot.

Sauté your onions, celery, and carrots with salt, pepper, Italian seasoning, and smoked paprika.

Throw in the garlic and Calabrian chili paste and let that cook for another minute.

Clear the center in the pot, add tomato paste and let it cook off in the pan before stirring with the rest.

Deglaze with white wine, scraping up any brown bits on the bottom of the pan.

Add in the chicken broth.

Season with salt and pepper.

Add in the sun-dried tomatoes.

Add the chicken back into the pot along with its juices.

Add in a Parmesan rind.

Cover and simmer for about 10 minutes to finish cooking the chicken.

Remove the chicken and the Parmesan rind from the pot.

Pour in the heavy cream and give that a stir.

Add in the uncooked gnocchi.

Add the cooked shredded chicken.

Let that simmer for a few minutes until the gnocchi is tender.

Finish with a couple handfuls of spinach.

Add fresh basil and fresh Parmesan.

1 tbsp oil
1 lb chicken breasts
to taste salt
to taste pepper
onion powder
garlic powder
1 tsp smoked paprika
2 tsp Italian seasoning
1 medium onion, diced
2 stalks celery, diced
2 medium carrots, diced
4 cloves garlic, minced
1 tsp Calabrian chilies
3 tbsp tomato paste
0.5 cup dry white wine
6 cups low-sodium chicken broth
Parmesan rind
1 cup freshly grated parmesan cheese
0.5 cup sun-dried tomatoes (in oil), julienned
1 cup heavy cream (or half & half), room temp
1 lb potato gnocchi
2 handfuls fresh spinach or kale
1 handful torn basil
red pepper flakes

Tips
Add sun-dried tomatoes earlier for more infused flavor.
Garnish with parmesan cheese, red pepper flakes, and fresh basil.
