1Make the sauce: In a bowl, add light mayo, low sugar ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix and refrigerate to thicken.
2Prepare the potatoes: Cut potatoes using a crinkle cutter or knife. Add cooking oil spray, chicken stock powder, and paprika. Mix and air fry or oven bake at 200C/400F for 20-25 min (air fryer) or 25-35 min (oven).
3Prepare the chicken: Cut chicken breast into thin strips. Season with smoked paprika, cayenne pepper, black pepper, salt, and garlic powder. Mix.
4Prepare the cornflakes: Add crushed cornflakes to a plate. Add a dash of the same seasonings used for the chicken and crush into smaller pieces.
5Bread the chicken: Dip each chicken piece in flour, then whisked egg, then crushed cornflakes. Spray with light cooking oil and air fry or oven bake at 190C/375F for 16-20 min (air fryer) or 200C/400F for 18-22 min (oven), flipping halfway.
