Cottage Cheese Pizza Crusts

Directions

  1. 1In a blender, combine two cups of cottage cheese and two large eggs.
  2. 2Blend until well combined and smooth.
  3. 3Transfer the blended mixture to a mixing bowl.
  4. 4Add half a teaspoon of baking powder, a sprinkle of salt, and about 3/4 a cup of almond flour to the mixture.
  5. 5Stir everything together until well combined. You can add more flour if you want a thicker dough.
  6. 6On a parchment-lined pan, scoop out the dough to create four to six pizza crusts, making sure to leave space between them as they will expand.
  7. 7Pre-bake the crusts in the oven at 400 degrees Fahrenheit for 18-25 minutes, or until browning.
  8. 8Remove the pre-baked crusts from the oven.
  9. 9Top the crusts with a thin layer of tomato sauce, shredded cheese, and a sprinkle of Italian seasoning.
  10. 10Place the pizzas back into the oven at 400 degrees Fahrenheit for about 5 minutes, or until the cheese is melted.
  11. 11Serve the pizzas immediately after taking them out of the oven.
