In a blender, combine two cups of cottage cheese and two large eggs.

Blend until well combined and smooth.

Transfer the blended mixture to a mixing bowl.

Add half a teaspoon of baking powder, a sprinkle of salt, and about 3/4 a cup of almond flour to the mixture.

Stir everything together until well combined. You can add more flour if you want a thicker dough.

On a parchment-lined pan, scoop out the dough to create four to six pizza crusts, making sure to leave space between them as they will expand.

Pre-bake the crusts in the oven at 400 degrees Fahrenheit for 18-25 minutes, or until browning.

Remove the pre-baked crusts from the oven.

Top the crusts with a thin layer of tomato sauce, shredded cheese, and a sprinkle of Italian seasoning.

Place the pizzas back into the oven at 400 degrees Fahrenheit for about 5 minutes, or until the cheese is melted.

Serve the pizzas immediately after taking them out of the oven.

Tips
Make sure to spread the dough far enough apart on the pan as they expand during baking.
You can use whatever flour you want, such as rolled oats.
