Mexican Meatloaf

Directions

  1. 1Dice white onion, jalapeños, and cilantro.
  2. 2Combine ground beef, cilantro, jalapeños, onions, breadcrumbs, milk, eggs, and taco seasoning in a large bowl.
  3. 3Mix the meatloaf mixture thoroughly by hand until well combined.
  4. 4Press the meatloaf mixture into a loaf pan to shape it.
  5. 5Flip the shaped meatloaf from the loaf pan onto an oiled serving platter.
  6. 6Place the meatloaf on a smoker set to 275°F (135°C) and smoke it until the internal temperature reaches 145°F (63°C).
  7. 7Pour enchilada sauce into a pan and add Oaxacan cheese to melt.
  8. 8Remove the meatloaf from the smoker once it reaches the desired internal temperature.
  9. 9Let the meatloaf rest for 15-20 minutes before slicing.
  10. 10Slice the meatloaf into individual portions.
  11. 11Pour the melted Oaxacan cheese and enchilada sauce mixture over the sliced meatloaf.
