1Soak 1 cup of dry chickpeas in a large bowl with enough water overnight.
2Drain the soaked chickpeas and transfer them to a pot. Add 4 cups of fresh water and a pinch of baking soda.
3Bring to a boil, then reduce the heat and simmer for about an hour until the chickpeas are tender.
4Drain the cooked chickpeas and rinse them with cold water to remove the skins.
5Add the chickpeas to a food processor and blend with 1 cup of tahini, 2 ice cubes or cold water, juice of 1 lemon, and a generous pinch of salt.
6Blend until a smooth puree forms.
7Spread the hummus onto a plate.
8In a frying pan, cook the cubed steak with 2 tablespoons of ghee, a pinch of salt, and a handful of pine nuts. Add a pinch of smoked paprika at the end.
