Roasted Onion Hummus

Directions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Peel the onions and arrange them on a baking sheet.
  3. 3Drizzle the onions with olive oil.
  4. 4Roast the onions in the preheated oven for about 30-40 minutes, or until they're caramelized and soft.
  5. 5Allow the roasted onions to cool.
  6. 6In a mortar, crush the garlic cloves.
  7. 7Heat olive oil in a pot.
  8. 8Add the crushed garlic to the pot.
  9. 9Stir in paprika and cumin.
  10. 10Add a can of garbanzo beans to the pot.
  11. 11Season with salt and pepper.
  12. 12Cook until the chickpeas are coated and heated through.
  13. 13In a food processor, combine a can of garbanzo beans, garlic cloves, roasted onions, tahini, olive oil, lemon juice, ice cubes, and salt.
  14. 14Blend until smooth, adding water as needed to reach desired consistency.
  15. 15Transfer the hummus to a bowl.
  16. 16Create a well in the center of the hummus using a spoon.
  17. 17Chop fresh parsley.
  18. 18Pour the spicy chickpeas into the well of the hummus.
  19. 19Garnish with chopped fresh parsley.
  20. 20Drizzle with additional olive oil.
  21. 21Serve with pita bread.
