Preheat the oven to 450F.

Wash and peel an entire sweet potato.

Dry the peels with a paper towel.

Place an empty baking sheet in the oven for a couple of minutes.

Lightly spray the baking sheet with oil and lay your peels on it, being careful not to overcrowd.

Bake the peels for 15 minutes at 450F or until the edges begin to get crispy.

While the peels cook, mix together 1 part melted butter with 1 part brown sugar, a pinch of salt, and cinnamon to taste.

In a separate pan, toast pecan pieces for 5 minutes in the oven.

Add the toasted pecans to the brown sugar butter mixture.

Remove the peels from the oven.

Drizzle the brown sugar butter mixture on top of the sweet potato peels.

Tips
Airfryers work best for crispiness.
Don't overcrowd the pan, use a single layer of peels.
Heat your pan in the oven first for a couple minutes, then spray on lightly oil and your peels.
Pat dry with a paper towel after peeling, the less water in them the better.
