1 teaspoon gelatin
3 tablespoon water
1 teaspoon berry extract
1 teaspoon Berry liquid stevia or vanilla stevia
Equipment

Tips
Use full-fat cottage cheese (4% or 2%).
If using frozen strawberries, use ¾ cup and possibly more gelatin.
You can substitute other berries or full-fat Greek yogurt/ricotta cheese (nutrition will change).
An immersion blender may not work as well.
Collagen can be omitted, but increase gelatin to 2 teaspoons and double the water.
Gelatin is crucial for the mousse texture; otherwise, it will be a smoothie.
Avoid using maple syrup or honey to sweeten. Use a keto-friendly sweetener instead.
If the mousse is gritty, ensure the cottage cheese and collagen are well combined and blend it thoroughly. Use a high-powered blender or food processor on high speed for at least 3-4 minutes.
