Heat olive oil in a large pan over medium heat.

Add diced onion and minced garlic, sauté for 5-7 minutes until translucent and fragrant.

Stir in tomato paste and cook for 1 minute.

Add Italian seasoning, salt, and pepper.

Pour in heavy cream or coconut milk and stir.

Add chopped sun-dried tomatoes and stir to combine. Cook for 5 minutes.

Add drained and rinsed butter beans and stir. Cook for another 5 minutes.

Cook for 10 more minutes, stirring occasionally, until the sauce thickens.

Stir in baby spinach for 2-3 minutes until wilted.
